Its come to the point in our relationship, when I tell you about "hella." Oh yes, the word that speaks to the heart of all Bay Area natives. Some people think of hella as simply meaningless street slang. Well, first of all street slang is rarely meaningless, and second, hella happens to be the most important epithet you will ever come across. The best way for me to describe the prime use of this word, is to put it into context. I tell a friend that I'm making Indian Food. My friend then responds that it's not "real" Indian Food. To which I say, “dude it’s hellaaaaa Indian.” Basically that response signals to my friend that while the food does not follow the traditional recipes for Indian food, it does embody the flavor and soul of such food. I don't measure ingredients, as you may have guessed by now. Replace/ Use what you want, and as always...enjoy!
INGREDIENTS:
Red and Yellow Bell Peppers sliced
Mushrooms
Spanish Onion
Tofu
Brown Rice
Quinoa
Almond Milk (unsweetened)
Seasonings:
Turmeric
Yellow Curry
Cayenne Pepper
Basil Leaf
Kosher Salt and Pepper
Olive oil (for cooking)
Recipe:
Cook quinoa and brown rice together, you boil then simmer it based on instructions. After that’s cooked, season with basil and turmeric then set aside. For the main dish, sauté' all ingredients with olive oil in a pan (I used a wok). Start with the onion and peppers, next add tofu and last add the mushrooms. Once cooked thoroughly, turn pan to simmer, and add enough almond milk to make a sauce. Then add curry, cayenne, salt and pepper to pan. Let everything sit, covered, until all the flavors settle. Serve with the rice. All done!
